Crab Cakes

1 lb. crab meat

1 egg

1/4 cup mayonnaise

1/2 tsp. dry mustard

Dash Worchester

1/4 c. onion, chopped

1/4 cup chopped green pepper

1/2 cup bread crumbs

1 tsp. seafood seasoning

5 baby zucchinis, shredded

 

Combine all ingred. in a large bowl. mix together. Make into patties and bake for 15 min. @ 350 degrees

 

 

Zucchini Bread

2 cups sugar

4 eggs

1 cup canola oil

3 1/2 cups flour

1 1/2 tsp. baking soda

3/4 tsp. baking powder

1 1/2 tsp. salt

1 1/2 tsp. vanilla

2 cups grated zucchini

1 cup walnuts (optional)

 

Beat eggs with sugar and oil. Mix together flour, baking soda, baking poder, salt and vanilla. Gradually add to egg mixture and then add zucchini and nuts. 

Put into 2 greased loaf pans

Bake at 350 degrees for 55 minutes.

Chocolate Chip Zucchini Bread

3 cups flour

1/2 tsp. baking powder

1 tsp. salt

1/2 tsp. ground cinnamon

1/2 tsp ground nutmeg

1 tsp baking soda

3 eggs

2 cups sugar

1 cup veg. oil

2 tsp. vanilla extract

2 cups grated zucchini

1 cup chopped pecans

1 cup chocolate chips

1 Tbsp. orange zest

 

Preheat oven 350 Degrees. Grease 2 9x5 loaf pans. Mix dry ingred tog. In a large bowl beat eggs until fluffy, add sugar, continue beating, stir in oil, vanilla, zucchini, pecans, choc chips and orange zest. Add to flour mixture. Pour in pans.

Bake 50 minutes or toothpick is clean

Chill before slicing. Serve with whipped cream and ribbons of zucchini.

Rhubarb Cake

Mix together:

1/2 cup butter

1 egg

1 tsp. vanilla

1 1/2 cups brown sugar

 

Add:

2 cups flour 1/4 tsp. salt

1 tsp. baking soda

1 Tbsp. lemon juice

1 cup milk

2 cups rhubarb

 

Topping:

1/2 cup pecans

1/2 cup sugar

1 tsp. cinnamon

 

Pour batter in a 9x13 pan. Add topping. Bake at 350 degrees for 45-50 minutes/
